Roast Winter Squash with Optional Sage & Pumpkin Seeds


A little sweet, warming, and a little spicy, this is one of our favorite ways to enjoy sweet winter squash.  The squash is SO good this year. Like the most flavorful winter squash I (Susanna) have had in CO so far (8 years). 

Featuring a mix of beautiful Red Wagon Farm organic delicata winter squash and Aspen Moon Farm organic butternut. We slice and roast the squash with organic extra virgin olive oil and Real sea salt.

Then, if you want the works, we toss them with toasted, sprouted organic pumpkin seeds (pepitas), dried red chile, fresh ground cinnamon from Savory Spice Shop, and fresh organic sage.  Delicious!

But we get it if you can't have / don't want the topping items, and it may be even better. This squash is so darn tasty these flavors aren't even necessary, though they're fun.

PS - we do leave the skin on these squash. It is not just edible and nutritious - it's tasty!
