Our spicy tuna bake's sibling, we made this version plant based with organic pinto beans instead of tuna for a super fun and colorful meal.
We mix organic pinto beans with roasted organic sweet potato, organic carrot, organic sweet pepper, organic pureed tomatoes, organic oregano, organic parsley, organic garlic, red chili flakes, cayenne, ground chipotle chiles, olive oil, pink sea salt and black pepper.
We then bake this for a comforting and hearty protein plus veggie dish. Top with your favorite cheese when heating for a little extra oomf.
