Fall Vegetable Soup with North African Style Lamb Meatballs (GF)


Full of flavor!  Succulent lamb meatballs are a perfect vehicle for bursts of spices and delicious simmered with fall veggies.

Our take on meatballs is grain and dairy free. Here we are inspired by North African/ Morocco and blend Colorado raised Triple M Bar Ranch lamb, and a fine puree of organic onion, organic carrot, organic kale, organic garlic, organic apple cider vinegar, olive oil, cumin, cinnamon, black pepper, nutmeg, ginger, fresh organic mint, organic parsley, organic cilantro and Real sea salt. 

We simmer the meatballs in our rich housemade chicken stock* with Red Wagon Farm organic kale, Aspen Moon Farm organic Red Kuri squash, Red Wagon Farm organic onions, Aspen Moon Farm organic carrots, organic lemon juice we've freshly squeezed, olive oil and Real sea salt. 

Add your own pasta if you like. For a hearty meal we like to add Cappello's gluten-free fettuccine cut into pieces in the last 30 seconds of heating the soup and/or enjoy with some warm Ponjoo (gluten free cheese bread). 

1 Quart or 1 Pint.  1 Quart serves 2-3 (9 meatballs per quart) for $5.83 per serving for 3. Pint Serves 1-2. Price includes $1.25 jar deposit. 

 *We make our chicken stock with organic chicken backs, locally raised chicken feet and filtered then pH balanced water.
