This is a garlicky, dressed up and succulent vegetable side that the oregano and pine nut pesto really makes something special.
We slice tender, flavorful organic, local summer squash varieties and bake in layers smothered with smashed pesto sauce of organic garlic, pine nuts, organic extra virgin olive oil, organic Red Wagon Farm fresh oregano and Real sea salt. Try it topped with optional Pecorino cheese.
This is a delicious side or light lunch on its own- or breakfast! Susanna loves to eat it topped with a fried egg.
One Tin. Serves 3-4 as a side, 2 as a vegetarian main.
