This is a garlicky, dressed up and succulent vegetable side that the simple oregano and basil "pesto" (no cheese or nuts) really makes something special.
We slice tender, organic, yellow summer squash and bake in layers smothered with smashed pesto sauce of organic basil, organic garlic, organic fresh oregano, fresh squeezed organic lemon juice, organic extra virgin olive oil, and Himalayan sea salt.
This is a delicious side or light lunch on its own- or breakfast! Susanna loves to eat it topped with a fried egg.
Try it mixed with optional shredded organic chicken for a one dish meal.
And also delicious baked with your favorite cheese on top - try parmesan, goat cheese, feta, or cheddar as you prefer. Or brie if you've got something fancy around!
One Tin. Serves 4+ as a side, 3 as a vegetarian main.
Can be frozen but the texture is best enjoyed fresh.
