Greek Zucchini Ankara with Meatballs and Optional Feta Cheese


 A bright and beautiful medley of local, organic summer squash varieties from Red Wagon Farm and Kilt Farms we toss with olive oil and sea salt, then roast with organic marjoram, organic cumin, organic garlic and organic onion and organic chicken basil meatballs*.

We finish this summer veggie dish by adding a splash of fresh squeezed lemon juice, a variety of olives brined in salt and red wine vinegar, and a pinch of sweet paprika and cayenne.

Add optional organic sheep's milk feta cheese if you wish!

*Ingredients: These are paleo chicken meatballs with organic chicken, organic tomatoes, organic basil, organic black pepper, organic garlic powder, organic fennel, sea salt, organic parsley and organic vinegar.

Freezable in straight-edged mason jars (no curved shoulders) with appropriate head room or other freezer safe container. Simply run the frozen jars under warm water to slide out and heat or defrost first in fridge overnight.
