This festive and hearty Mexican soup, known as Cowboy Bean Soup in English, has a lot going for it.
Creamy pinto beans, roasted sweet and spicy peppers, and bacon (if you want) to top it all off with rich salty, smoky goodness.
We cook Colorado organic pinto beans (soaked and pressure cooked with filtered, pH balanced water and bay leaf for ultimate digestibility) with organic onion, organic garlic, organic roasted Anaheim and Poblano chiles and sweet bell peppers, organic tomato, Real sea salt, black pepper, and Mexican oregano.
