Hearty Vegetable Yellow Curry with Optional Chickpeas


A hearty fall vegetable curry featuring a nightshade-free curry spice blend that pairs wonderfully with the sweet and earthy fall produce.

We cook this up with a tasty mix of veggies including organic cauliflower, organic carrot, Red Wagon Farms organic hakurei turnips, Red Wagon watermelon or purple radish, Red Wagon organic butternut squash, fresh organic ginger, organic onions, and organic baby spinach.

We roast all the veggies for maximum deliciousness then toss them in a mild curry sauce we simmer with a mild yellow curry blend from Savory Spice Shop (coriander, turmeric, ginger, fenugreek, anise, cumin, Saigon cinnamon, black pepper, regular yellow mustard, mace and cardamom), organic cilantro, fresh squeezed organic lemon juice, organic coconut milk (guar gum free), organic fair trade coconut oil and Real sea salt.  

Add optional freshly made chickpeas for even more goodness.

Fantastic over rice with a scoop of our Colorado Peach and Apple Chutney!

1 Quart or 1 Pint.  Price includes $1.25 jar deposit.  One quart serves 3-4 with sides.  Price per serving for 4 servings is $4.49.
