Italian Wedding Soup may be a bit of a misnomer. In Italian it's known as minestra marinata with a meaning closer to "married soup" because of the lovely way the ingredients combine. This soup is made special by its cheesy egg ribbons (optional) swirled in a nourishing broth with thin strips of kale and meatballs.
Our take on meatballs is grain and dairy free with veggies for a binder instead of bread. Colorado pastured raised pork mixed with organic onion, organic celery, organic carrot, organic kale, organic garlic, organic parsley, organic mustard, organic red wine vinegar, and Real sea salt.
For the soup we simmer pork meatballs in our rich housemade chicken stock* with organic kale, organic onions, organic white wine vinegar, organic fresh thyme and oregano, olive oil and Real sea salt. Choose the optional mixture of egg and parmesan cheese to finish it off.
Quart or Pint. Quart serves 2-3 as a main or 4 as a side. Price includes $1.25 jar deposit.
Freezable in straight-edged mason jars with appropriate head room or other freezer safe container. Simply run the frozen jars under warm water to slide out and heat.
*We make our chicken stock with organic chicken, locally raised chicken feet and pH balanced water.
