Italian Wedding Soup may be a bit of a misnomer. In Italian it's known as minestra marinata with a meaning closer to "married soup" because of the lovely way the ingredients combine. This soup is made special by its cheesy egg ribbons (optional) swirled in a nourishing broth with thin strips of kale and pork meatballs.
Our take on meatballs is grain and dairy free with organic ground pork and a fine puree of organic onion, organic carrots, organic kale, organic celery, organic garlic, organic red wine vinegar, olive oil and Real sea salt.
For the soup we simmer pork meatballs in our rich housemade chicken stock* with organic kale, organic onions, organic lemon juice we've freshly squeezed, organic fresh thyme and oregano, olive oil and Real sea salt. Choose the optional mixture of egg and parmesan cheese to finish it off.
Add your own pasta if you like. For a hearty meal we like to add Cappello's gluten-free fettuccine cut into pieces in the last 30 seconds of heating the soup and enjoy with some warm Ponjoo (cheese bread).
1 Quart or 1 Pint. 1 Quart serves 2-3 as a main or 4 as a side. Price includes $1.25 jar deposit.
*We make our chicken stock with organic chicken, locally raised chicken feet and pH balanced water.
