We soak then simmer organic green lentils and toss them a vinaigrette of marinated minced organic shallot, fresh squeezed organic Meyer lemon juice and zest and organic orange juice, organic extra virgin olive oil, organic unfiltered apple cider vinegar, a drop of raw unfiltered honey for balance, and Real sea salt.
Then we fold in organic carrot and organic mint leaves and top with (optional) fresh goat cheese.
