So comforting, this is a simple, family-pleasing dish to really enjoy Fall. It's easy to pop in the oven to heat and serve, and is a neutral enough side for all kinds of meals.
Roasted organic spaghetti squash from Aspen Moon Farm with sliced organic onion sauteed in organic coconut oil nestled with organic coconut milk (guar gum free), a squeeze of organic lemon juice, organic thyme, Real sea salt and a pinch of nutmeg.
This does not taste very coconut-like though, surprisingly. It's a lovely, warming combination.
