Bright Summer Squash Soup with Italian Salsa Verde


Delicious cold or hot, this is a bright and refreshing soup we finish with an invigorating explosion of herbs, not a chile based salsa like that of Mexico.

We start with sauteing beautiful summer squash (yellow and/or green) in olive oil, then puree it with organic onions in pH balanced water.  We top it off with a flavorful Italian salsa verde of capers, organic onion,  organic basil, organic parsley and organic oregano, fresh squeezed (by us) organic lemon juice, organic garlic, extra virgin olive oil and Real sea salt.

Quart or Pint. Quart serves 2-3 as a main and 4 as a side. Price includes $1.25 jar deposit. Delicious served warm or chilled.
