This is a bright and uplifting while deeply satisfying Thai dish. The creamy broth infused with aromatic lemongrass and kaffir lime is heavenly and refreshing even in warmer weather.
We simmer a rich broth of our own chicken stock**, organic coconut milk (guar gum free), galangal (a ginger-like root), organic ginger, kaffir lime leaves and lemongrass with brined (in salt) organic chicken, local Hazel Dell mushrooms (oyster, crimini and/or shiitake as available), and organic bok choy.
We finish it with fresh squeezed organic lemon juice and organic scallions.
**We make all our stocks and soups with filtered, pH balanced water.
